Great... I was going to make brownies to bring down to our dog-show weekend.
Stopped at the store, grabbed a few things, and heading home.
I have brownie mix. I have frosting stuff.
I have no eggs.
CRAP.
Wouldn't be a problem to zip on over to the store EXCEPT the county fair is going on right now,
about 2 blocks from my house, and the streets are an INSANE ZOO.
There is NO freakin' way I'm going to go out if I can help it...
and eggs for brownies just isn't a good enough reason!!
SO... what can I do? Besides not make them at all?
I do have applesauce, Miracle Whip (but it's light), Veg oil, butter.
I kinda tried a search on line, and things were mentioned,
but I would rather hear it from someone here that has tried it
and can tell me if its worth it!!
I need to make them tonight though.

| Dana you can try to make it with soda instead of the eggs, water and oil. Pour a can of coke, diet coke, cherry coke, into the batter and mix. Put in the oven and bake normally just keep your eyes on it. I would oil or use pan in the pan though. |

| Oops, just realized you said you searched already too. I have never tried any of them. I have used applesauce to replace the oil in a recipe and it was ok. |

Felissa - I've had cake that people have done that way! Like using a white cake mix and orange soda.
But not really sure what would happen with brownies! Besides, all I have for soda is diet sprite...
I opted for the not make it at all option.
We don't keep eggs here at home much, since Bruce's heart attack.
But I usually try to have egg beaters in the freezer for such occasions.
I guess I need to put them on my shopping list.

| in the future too if you have no eggs for baking you can replace 1 tbsp of vinegar per egg |

I have the best solution of all. You are coming to my house. I have plenty of eggs, if you really want brownies you can make them when you come.

P.S. Dinner will be about 6 on Saturday. If anyone is in the neighborhood - stop on by. Menu: Coq au Reisling (white wine instead of red)
asparagus, fresh tomatoes (from my garden) with fresh mozzarella (sp.) and fresh basil, egg noodles and chocolate mousse for dessert (or brownies). Just let me know your coming so I can adjust the amount I cook. |

| I actually heard the recipe for the coca cola cake with diet coke and fudgy chocolate cake. So it works. I guess you will just have to borrow an egg or two from Donna. Enjoy your weekend together. |

Seriously folks... Donna is the BEST cook!!!!!
She makes the best stuff... even if I don't know how to pronounce it...!
I think I will wait and make the brownies for the next UKC shows in Sept instead. |

I have to admit, I would probably go next door or to one of my neighbors and borrow some eggs! Or opt for something else....
We have various activities nearby as well some days and I understand why you wouldm't want to go out... But it looks like Donna is making chocolate mousse instead so YUM-OH! |
