Betty Crocker now has a Gluten Free set of box mixes. One is cookies, one is brownies, and then there is a yellow cake and a chocolate cake. They are located next to their regular box mixes at the supermarket.
For Christmas we traditionally make Trifle for dessert. My friend is gluten intolerant, we eat at her house. This year we decided to make a "black & white" trifle. She made yellow cake from one of the other gluten free mixes, and I made Betty Crocker's GF chocolate cake. OMG, the yellow cake was mealy (think cornbread), the chocolate cake was indistinguishable from regular gluten choc cake. Last year we used vanilla pudding in the trifle, this year I got a creme brulee mix that had no offending ingredients, much better. I used a blend of raspberry pie mix and Smuckers Special Berry Topping (in the ice cream topping area).
You layer berry mixture followed by cake followed by brulee in a glass bowl so you can see the layers (steep sided is best). When ready to serve top with whip cream. Putting fresh berries in the layer and on top is the greatest but if you can't don't worry. Scoop out servings and sprinkle with cream sherry. MMMMMMMmmmmmmm off to leftovers now  |

| I made one of the Betty Crocker ones, too, and loved it. The Namaste mixes are pretty good, too, but a lot more expensive. |
